Cooking with Sophie: Butternut squash & sweet potato soup

Over the past few weeks Quince & Cook’s Instagram has been our Sophie’s go-to place to share her wonderful recipes. She has shown us step by step how to make some super easy and tasty dishes and baked goods at home. From piping hot soup served with homemade bread, to snack-size puff pastry tarts.

There’s just something so comforting about a nice piping hot bowl of soup, right? Even more so when it’s homemade! 


I love making soup. It’s super simple, requires little effort and is a great way to use up ingredients around the house that might be heading to their best by date. We’ve recently had our vegetables delivered weekly by The Handy Shop, Crieff so I’ve been letting their selection of goods in the box dictate what soup I’m going to make. 


Today, I’m sharing the recipe for butternut squash and sweet potato soup. I’m keeping it straightforward but I think adding some spice with chilli flakes or chilli peppers would make for a great taste of sweet and spicy. Let me know if you try it out!


Ingredients 

1 Squash 

1 Huge sweet potato

1 Apple

1 Onion

½ Tsp cinnamon

½ Tsp nutmeg

A good squirt of honey

2 Veg stock cubes (chicken works well too!)

Method

Start by heating up oil or butter in a large pot and add in your chopped onion and cook until soft and translucent. Then, pop in your nutmeg, cinnamon, cubed butternut squash and sweet potato. Let all of the flavours and spices infuse in the heat for a few minutes and enjoy the fabulous smell that is about to fill your kitchen!


Add in your stock cubes and hot water. I never really measure my water, I prefer to just bung it in and judge it by how thick I want the soup to be. 


Bring to the boil and allow to simmer until the vegetables are nice and soft. Once softened, you’re ready to start blitzing. Chuck in the chopped apple and healthy dose of honey then blitz away until nice and smooth.

Serve up piping hot with a side of fresh bread or some oatcakes - whatever takes your fancy! I even like to fry a little chorizo until it's nice and crispy and sprinkle on top with a drizzle of cooking or olive oil.
