Cooking with Sophie: Grilled Aubergines
Quince & Cook’s Instagram has been our Sophie’s go-to place to share her wonderful recipes. She has shown us step by step how to make some super easy and tasty dishes and baked goods at home. From piping hot soup served with homemade bread, to snack-size puff pastry tarts.
One of the best things about going on holiday to the Mediterranean is not only basking in the sun with a glass of sangria. It’s the absolutely delicious, unbelievably fresh food on offer in local restaurants and markets.
For me, this grilled aubergine recipe is the perfect little taste of the Mediterranean in a side dish. Like many of my favourite recipes, it’s also super easy and quick to make using bits and bobs you most likely already have in the cupboards. However, it’s a recipe that you can get super creative with and add your own spin to.
So, here’s how I prepare and serve up grilled aubergines.
Ingredients
2 Aubergines
Feta Cheese
1tbsp Oil, ½ tsp chilli flakes & ½ tsp oregano
Lemon
Parsley
Salt
Method
First of all, give the aubergines a quick rinse then slice. Lay the slices out flat and sprinkle with salt to draw out the excess moisture and pat dry. Who knew aubergines enjoyed such pamper treatment!
Brush the aubergines with the oil, chilli and oregano mixture making sure that they’re nicely coated.
Then, grill for around 3 minutes making sure that they are well browned/lightly charred. Once you’re happy with how they’re looking, serve on a big plate with a drizzle of freshly squeezed lemon. For the final finishing touch sprinkle some feta cheese and chopped parsley on top. Bon Appetit!
I love how simple and easy this is to make. It makes a fabulous Mediterranean side dish and a great addition to a BBQ in the summer.
